Listmania Fifteen – Currently i am;

Prompt for week fifteen:

We are going back to where we started. I figured it would be nice to check in with “Currently I am” again after more than THREE months of listmania.

Currently I am:

Reading: Still reading the Happiness Project. Sorting through all of my iPad magazines, and deleting the ones that i downloaded but didn’t end up reading.


Listening to: Cold Chisel. Recorded it on the weekend, sat and watched it, turned it up loud got to the last song and the read about the passing of Chrissy Amphlett, (Her husband was the drummer when we saw them in 2011).

Laughing at: Angel and her weird antics. The kid cracks me up.

Swooning over: Jack 🙂

Planning: On buying a new camera bag.


Eating lots of: Ciabatta Bread, Feta Cheese, Spinach. (OMG why had i never discovered this yumminess before)

Preparation Time: 5 minutes | Cooking Time: 45 minutes | Serves: 2

Ingredients: 3/4 cup butternut pumpkin, peeled, sliced and roasted | 50g Persian feta | 20 grilled pine nuts | 3/4 cup wilted spinach, drizzled with a squeeze of lemon | Onion jam, to taste | Handful of rocket leaves, cleaned and picked | 4 slices olive ciabatta | salad dressing (optional)

ONION JAM (makes 1 cup) | 2 brown onions, chopped finely | 1/2 cup dark brown sugar | 1/4 cup balsamic vinegar | Seasoning

Method: 1 | To make the jam, brown the onions in a frying pan in a little olive oil. When they are golden brown and caramelised, add the sugar and balsamic vinegar, then continue to cook and reduce until most of the liquid is gone (about 35 minutes). Season to taste. 2 | To make the sandwich, layer the spinach on the ciabatta slice and place the sliced pumpkin on top. Crumble the feta over the pumpkin. Add a dollop of onion jam and scatter the grilled pine nuts on top. 3 | Place under a grill until feta is warm. Then top with dressed fresh rocket and the second slice of ciabatta. 4 | Repeat the exercise to make the other sandwich.

Feeling: Tired.

Discovering: new features on the Galaxy s3 that i got last week.

Looking at: My 11 year old grow up before my eyes, when she buys a one direction Magazine.

Wearing: winter clothes, time to get the scarves out again.

Cooking: up the meals from Michelle Bridges 12 Weeks Body Transformation Round 1, Week 11.

Wondering: If i have lost weight this week.

Trying out: completing all of my blog posts in the same day 🙂


  1. i was the same, but its worth doing it. The meals are actually and surprisingly quite nice. I was expecting boring and bland meals, but we have had some lovely ones, I am doing the programme but husband and daughter eat what i eat so its a win win. Most of the meals are for two but thats changing in the next round to reflect number of people eating them. Before going on it i never ate most of the cheeses, spinach, etc. now i am addicted to it all. Really nice healthy food, most of its easy to cook too.
